Avocado Toast Breakfast Sandwich

 

I recently watched a documentary made by CBC Marketplace Toronto, where journalists took a deeper look into the take-out breakfast sandwiches available to us in popular coffee shops. They definitely touched on a few breakfast sandwiches that I am very familiar with and use to eat frequently throughout the week. Some of them are advertised as ‘healthy’ which makes you feel great about what you are about to indulge in. Well, I was quite disappointed to learn the facts presented by CBC Marketplace Toronto. While they certainly taste great, a good percentage of those breakfast sandwiches are over processed, very high in calories and the opposite of healthy for you.

To cut a long story short, make your own! Its much better to know exactly what you are eating.

Here is one of my favorite DIY  breakfast sandwiches. Its sooo good it almost feels like a cheat meal. It has lots of protein, healthy fats and is low in carbs. Its a very healthy option for a breakfast sandwich and is much better for you than a few of those available in popular coffee shops. Also, this is sure to keep you full for most of the day!

 

Ingredients Used:

2 Tablespoons of 2% Cottage Cheese
1 Whole wheat English muffin
½ Avocado
2 Eggs Sunny side up
A pinch of chilli flakes
A sprinkle of cheese
