Flavourful Vegan Meatballs

My very first attempt at vegan meatballs was a huge success! They came out so flavorful and delicious, way better than meat with twice the nutrition. The secret ingredient in this tasty meal is nutritional yeast. This ingredient is used to make vegan cheese because of its nutty cheesy flavor. When I looked up the nutritional content I was blown away. But in the effort of keeping this short and sweet, I’ll say that I will be adding this to every recipe where possible! I’m officially obsessed with it.

Here’s how I made them!

Ingredients:

  • A 796 ml can of red kidney beans
  • ½ red onion
  • 4 cloves of garlic
  • ½ cup of old fashioned oats
  • ¼ cup of crushed walnuts
  • 4 tbsp nutritional yeast
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1 tsp oregano powder
  • 1 tsp turmeric
  • A pinch of chilli flakes
  • 1 tsp mustard

 

Directions:

Add all listed ingredients to a food processor or blender. I used my trusty KitchenAid Diamond Blender. You should end up with a thick batter that clumps and sticks to a spoon almost like play-dough. If your mixture is too wet, add breadcrumbs and mix it in until the mixture is dry and clumpy.

Pinch pieces of the mixture and roll them into balls of whatever size you prefer. Here is what mine looked like when rolled.

Preheat your oven to 375 degrees. You can now brown the meatballs slightly in a bit of oil. A minute or 2 on each side will do, as they brown very quickly. This step is completely optional.  After they have been browned, place them on a baking tray and bake for 15 minutes. Here is what mine looked like when browned before I baked them.

While they are baking prepare your tomato sauce. Once baked, add the meatballs to the sauce. Serve and enjoy!
