Spirulina Muffins

Spirulina is a blue/green algae that is grown in fresh or salt water. It was consumed by the Aztecs many years ago and became popular again when NASA discovered they could grow and consume it in space. It has been said to be one of the most nutrient dense foods on earth containing several vitamins, minerals and protein, which makes it a perfect choice for astronauts in space.

Here are a few reasons to include this superfood in your diet:

  • Nutrient dense and contains several minerals, vitamins and protein.
  • It has anti-cancer properties.
  • It may help lower cholesterol.
  • It has powerful antioxidant and anti-inflammatory properties.
  • It may help to reduce blood pressure.
  • It is immune boosting
  • It has been said to help prevent anemia.
  • It has been said to lower blood sugar levels.

I typically use Spirulina in smoothies or in yogurt, but lately I have been exploring other ways to use it. Considering my huge sweet tooth, this recipe for Spirulina muffins is by far my favorite way to use the superfood. I hope you give it a try too!



1 cup all-purpose flower

1 Tsp. baking powder

¼ cup of a sweetener of your choice (I used coconut palm sugar)

½ cup of butter

2 eggs

¼ cup of milk

1 Tsp. vanilla extract

1 Tbs. of spirulina powder



Pre-heat your oven to 350 degrees.

Mix your wet ingredient to your dry ingredients and stir well.

Bake for 20-25 minutes
