Avocado Mint Smoothie

With the tragic disasters that have happened lately such as Hurricane Harvey in Houston Texas, the last thing I want to do is waste food, knowing there are so many people who have lost everything.

It is so beautiful to see the amount of support and assistance pouring in from other cities and countries around the world. If you have not already done so, I encourage you to choose a charity you trust and donate as much or whatever you can. Every little helps.

In an effort to avoid waste, today I made this awesome avocado mint smoothie using up the produce I had in my fridge. It makes me feel so good to know I got my money’s worth at the grocery store because nothing ended up unused and in the trash. This smoothie was so tasty and filling that my husband and I didn’t have room for dinner.


Here’s what I used:

1 medium avocado

1 cup spinach

6 fresh mint leaves

1 cup almond milk

¼ cup organic old fashioned oats

Agave (to taste)

2 tbs of almond butter

1 tbs collagen peptides

1 tbs ground flax seeds

1 tsp chia seeds



I threw these ingredients into my Kitchenaid Diamond Blender.

My husband and I enjoyed this delicious smoothie in a mason jar, garnished with shredded coconut, cacao nibs and some more almond butter.
